I agree with Julie. It is best to reduce upfront, but it depends on how high your acid is. If
you try to reduce it more than 3% with calcium carbonate, it will result in a chalky taste I

Calcium carbonate prior to fermentation, Potasium Bicarbonate when fermentation is complete. I

I have mint and rum extract for my batch. I used real mint leaves too. I'm just waiting to
clear and then I'm going to experiment with "the right flavor" I like the rum idea, might have
to do one more...
