I've made lots of kits, but never had to worry about acidity. this time I want to make a Chardonnay with the final acidity of .7 -.8.
If I test for acidity when I first start the kit, will that number change as the wine ferments and ages?
Thanks. Had not seen this post. May try this next. I wonder if my Sauvignon blanc is too acidic? May go back to Chardonnay. I like the split batch approach.
