    Pectic enzyme can be added when you sulfite. I added 1.5tsp for 1.5-1.8 gallons worth of must.

    M&m crushed my last order or grapes for me. I wanted to get more hands on and see how long it
    would take by hand etc. I also was able to be a bit kore picky about the moldy grapes going
    into the must....
