This mead I’m drinking is the best home brew wine I’ve ever made. No sulfites added about six months between racking. All my wines before that were crap and I added sulfites I’m not anti sulfite but tons of wine was made without sanitizer or sulfite and everyone got buzzed for years and years.
Maybe the case I added to much sulfites. I would add some 5 tablets per 5 gallons then about 3 months later add 5 more then bottle.
For the sugar everything I made with that taste like rocket fuel. I may try using a lower gravity yeast and see if this helps.

Probably talking to myself but it’s been about 6 months since I made a few batches of mustang wine and between the rocket fuel flavor the added sugar gives along with the tartness from the mustang I will have no problem letting this bottle age for a year or longer!
Waders never seem to last me more than a year so I'm hoping keeping inside will prolong the life. so they don't spring a leak. Probably wishful thinking.
