it should mellow out a little with age... its the berries that give it the bitterness.

Good point though... There are alot of Newbies that think that stuff is good forever on the
shelf... Best to buy smaller quantities and rotate it out than to face the dreaded "dumping

Since your shooting for 15% it will take it a long time to finish out... I'd let it go and not

With berry, if you want the berry to shine through, do the 48 oz. You'll want to backsweeten

Just my 2 cents... but use fresh... Canned just won't be the same you'll have a sky high SG and
no flavor... IMO
Making wine is like waiting on a woman to get ready for dinner.... Do you want 'soccer mom' in PJ's and a ponytail, or 'sex kitten'in heels....Don't rush it!
