I have wondered about this too. I have recently purchased wine kits with the following stages:
Day 1: Mix must (juice, bentonite, water, sprinkle yeast)
Day 14: Rack wine, and do the degass immediately after do clarifying process
Day 42: Bottle
I am not planning on waiting until day 42 because...
What? You guys stir your wine in the primary fermenter?
I have never heard of this or seen it in any instructions.
Learn something new everyday. I also notice a contradiction when adding yeast... the package says dissolve in warm water and stir in must. Wine kit says to sprinkle on top...

PS: I assume the chitosan helps remove particles because I racked the wine before I added it since the wine had been sitting for 5 days and I didn't want to stir up and sediment when I mixed the chitosan in. There was no sediment in there and...

Guys ! I have been making wine for over 10 years. I was doing a couple of wine kits the other night, and I just found a package of Chitosan.
The Grand Cru kit had the Chitosan labeled "D2" (which I found in the garbage), so I am pretty sure that this other one belongs to the Niagara Mist...
