    It just sounded like an interesting yeast by the descriptions I've read and wanted to try something different but not at the cost of a wine kit. If it's not safe to use I'll stick with the Lalvin yeast the kit came with.

    I know I should leave my newly corked wine bottles upright for three days to allow the corks to seal but is it ok to lay them down long enough to apply the labels?

    Does anyone use wine kits strictly as a source of quality juice tossing the kit additives and yeast and proceeding as if making wine from fresh grapes?
