I bottled a batch of Zinfandel that was bulk aging for 13 months. The grapes were from Napa,
CA. They have been in the bottle for a little over one week. I had a bottle last night, it was
    very good, b...

Thank you gang, I have made the decision to go with the CC Mountain Valley Cab. I have heard
good reviews. You all have a great Thanksgiving with your family and if you're traveling, be

for a year. When do i start to add 1/8 tsp of SMBS every three months? The pack i added during
    the degas ...

Anodari, there is a difference of about a half gallon, 6.5 for the Italian and 6 for the "US"
which is probably made in Mexico. To your original question, it sounds like your fermentation
    is complete....

I can second the Red Mountain Cabernet kit, though it will probably take 18-24 months to really
come into it's prime from what I've read. Mine has currently only been bulk aging for about 4
    months now...

Sounds very plausible to me. I've had that happen with many many kits if they are fermented at
a reasonable temp (I target 74F). The 2.5 bottle top off is a reflection of the carboy used.
    You probably...

Just wondering, what was your initial and last SG reading? I suppose that fermentation could be
complete but that would be really fast. You may be stuck. it was 1.090 in begining and at the
    end of pri...
