  Yep, I saw the wiki article, I noticed it says it goes well with lamb, which I cook quite a bit

  After 15 days, personally I would just stabalize it and have a semi-sweet wine.

  Get a heat beltIf you see foam its fermenting, there won't necessarily be bubbles.Keep checking
