Hi guys

I'm going to use an old rhubarb and raspberry wine recipe and make champagne from it. The only problem is I don't have much rhubarb this year so I'm making it quantity up with raspberries.

I would like to make 3 litres if possible. Could someone tell me how much sugar is needed for a fairly alcoholic drink Cheesy ?

I have 2.5kg Rhubarb & 3.5 Kg of Raspberries.

First of all, welcome to the forum. Next thing, I get to tell you is to get get a hydrometer. It will tell you how much sugar is in your ferment before you start and you can convert that to how much alcohol you will have when it is done fermenting. There is apretty good tutorial on reading the hydrometer on one of the stickies at the top of this forum. It will also tell you how the ferment is coming along and when the ferment is done.
