I ran out of Acid Blend, and don't feel like buying a lemon and a lime. Will several to a dozen sweet tarts, get my apple wine sweet and with a bit of a pop to the flavor?
 
I would suggest adding malic acid to apple wine.

Make a sugar syrup solution and perform bench trials to determine sweetness level desired.

I picked up some concentrated Lemon and Lime juice.

Last year the apple wine was perfect after the 2nd racking, no additional sugar or anything. This batch has a unsatisfying bite to it and not sweet. I have learned to post adjust taste slowly.
 
If your wine has a bite to it then the acid is probably already high, have you tested it? Also, lemon and lime will give you citrus acid and like salcoco says you should use malic acid for apples.
