I am wanting to use the Red Star Montrachet yeast in my Winexpert Selection Malbec kit instead of Lalvin EC-1118 but my question is this. The Montrachet packet says it's only good for five gallons and the kit is six gallons of course. I am concerned the wine will not ferment to dry. Does anyone have any experience with this?
 
It just sounded like an interesting yeast by the descriptions I've read and wanted to try something different but not at the cost of a wine kit. If it's not safe to use I'll stick with the Lalvin yeast the kit came with.
 
ec 1118 is more meant as a champagne yeast. it is an aggressive strain with high tollerence for abv and so2...

it is a strong, reliable strain but does not bring a lot in the way of characteristics and flavor.

montrachet is prone to h2s issues so be sure to have a good yeast nutrient schedule.
