First time using MLF and Oak on Chardonnay. I went ferment, then MLF, then 5 weeks of medium french oak staves a month after MLF innoculation. Racked out the staves, and now I'm getting an odd, slightly woody, slightly rubbery taste in the Chardonnay. Definitely off a bit from the normal crisp taste before the staves were added.

It's my first use of MLF innoculation. I used staves similar to what I normally did with reds (rinsing with boiled water then dropping in) and they always come out well.

Did I wait too long after MLF for the staves? Did it out of order? That is all I can think of.

Wonder if it will mellow out with aging?
 
When I oak a white I use 1/2 the amount that I use for reds. With the MLF the wine will not be as crisp, They say it will be more buttery, you can check the TA. If needed add some acid. You can add oak anytime during aging.
