The EC-1118 is insurance in case the ABV gets too steep and the RC212 gives up the goat. I used Go-Ferm to rehydrate and Fermaid O, 1/2 at the start of fermentation and the other 1/2 at 1/3 to 1/2 sugar depletion and it finished pretty dry, like .993, without using the EC-1118.
Just had a sample last night and it's pretty darn heavy (compared to my Sangiovese kit) and has very good flavor. Nice oak. Should be really nice in a few years.
