What exactly do you mean by "proven"?
My first aronia wine is selling really well. I would have to go back to my notes but in a nutshell I pressed the juice, added water back to the berries and let them steep and pressed them again. I would guess I used 4-5 pounds of berries per gallon in the end. I finished the wine sweet at about 7% residual sugar to balance the astringency.
