I was just wondering once the merlot grape skins have done their job. (I am making the winery series super tuscan kit), should I just "toss them" or is there another use for them?

It seems like such a shame that here I have used two jars of merlot grape skins and they destiny is obscurity in the compost bin. I must admit however when I make wine from my own few vines that I have, I dump them also.The vines that I have are not merlot .
