I just picked up this kit yesterday and started it...I did add in the oak powder but I'm considering not adding in the oak cubes later on...

Anyone have opinions on this??

It's just because I'm not a huge oak fan but considering I've never had a Barolo before I'm not sure how that would hinder the outcome...

the addition of oak after fermentation is to provide the proper tannin profile of the Barolo wine. follow the instructions age the wine at least a year and the tannin will smooth out. if you don't add the oak you wasted your money on buying this varietal.
 
By definition, Barolo gets a lot of oak. They can spend years in wooden casks.

I put my Barolo in a oak barrel for a month (first in the barrel)
Then I aged in a carboy for 6 months with 3 oz of med toast Hungarian cubes.

The wine turned out nice, but still could have used a touch more of oak!
