Finally got around to starting two Williams kits today. A Petite Sirah and a Cabernet Sauvignon.
The Sirah measured 1.095 in the pail. I added 1 1/2 tsp. tannins and the kit came with generic toasted oak and 71B-1122 yeast.
The Cab measured 1.094 and I also added the tannins to this one. It came with the same oak chips but uses RC-212 yeast.

14 days until 1st rack.

The juices smelled great.
 
Doc, I have never made a red from Williams Brewing Company but I have made the Muscat a number of times and have been thoroughly pleased. I might give a red a try just for the fun of it. Although it is only 5 gallons when finished, the price is still very good. Good luck with yours.
 
I really like the Williams wines. Easy to make if you understand winemaking.

Their Viognier is fantastic, best I've ever had.
