I finally started my version of Ancient Orange Mead yesterday. I changed a few things and went with 3 lbs of honey per gallon since I don't really like my finished mead really sweet. Starting Gravity was 1.112.


Ancient Clementine Mead


Ingredients for 5 gal Batch:

This mead also gets a name change since I can't seem to stick with recipes and have to make changes!

Ancient Clementine Mead


Transfered to secondary since I started this in plastic primary and the clementines started to brown a bit. I had stirred quite a bit in the beginning and certainly smells and tastes like I extracted most of the citrus goodness.


For an extra twist I threw in 3 Bourbon Vanilla beans that where split and scraped.

Your pictures from a few weeks ago looked so good, I've ordered my
honey and am ready to try this. It will be my first attempt of a
non kit fermentation. I've done beer and wine and this just looks
like it tastes so good.
