All items sanitized. so when a test sample is taken from the carboy, can it be placed back into the carboy?

Depends on which test. SG? I put mine back. TA? Nope - it has 'stuff' added to it.
pH? I dunk the probe directly into the top of the carboy, so there is no sample :)

Was told that I should taste the sample every time so that I could taste the evolution of the wine and also (if something goes wrong) learn where in the process the problem is. I don't like wasting it though!

well... personally i dont place back in what i have drank from, but i give bottles away. If your gonna keep it all for yourself go for it... i just only take a sips worth or so for tasting so there is not an issue of having extra and it doesnt make a dent in the level in the carboy...

To be a true test sample you have to drink it for "Quality Control";)
