Update on the cooler. I realize I'm not insulated enough but I was wondering if my problem is the freezer. My shop/winery is staying in the mid 80's I can only seem to keep a differential of 15*. My question is my 5 cf freezer when I shoot the inside sides varies from 15 to sometimes as much as 30 degrees and the brine 45 to 55 degrees. It can't possibly ever shut off. Is there something wrong with the freezer or is the constant introduction of warmer brine not letting it work properly. Even if it can't maintain a freezing temperature I would think the sides should read closer to freezing or below. Tried researching it but can't come up with anything. I'm probably at R15 or so right now and will be adding another R 20 poly iso.

Although it was a lot of fun my freezer chiller unit didn't work. Either the freezer couldn't keep up with cooling the return brine or it froze. I had to keep adjusting the temperature based on the ambient temps. Just this morning I cut in and installed a cheap 5k BTU window unit and holding 60* with no tweaking of the unit. Later today once the wine gets closer to 60 I'll see how close I can get to 55 although I'm happy with 60. I'll keep an eye on the humidity and if needed I'll buy the heated condensate drain Meadmaker1 recommended. I'll buy another Inkbird for the freezer and use it to freeze fruit, cold stabilization, extended maceration probably any number of uses.

A friend of mine had a wine room 8 x 10 with a 7 foot ceilings had about 800 bottles of wine and he had an 8000 BTU window a/c it kept it
about 57 to 59 he took the thermostat off the coil and put it in the airstream

Mine is a 4x6 with a 7' ceiling. I plan on doing the same with the thermo coupler but without doing anything to the unit I'm hitting 60 easily. I have an Inkbird controlling the unit so it shuts off the fan. It only runs for about 2 minutes before it shut off so I think the humidity should be OK. Does your friend have any humidity issues?
