I just started 50 gallons strawberry wine for my wedding in August. I've been successfully making fruit wines for a few years but nothing to this extent. I'm using 5 gallon buckets for the primary. Should I ferment the buckets separately or mix the buckets together during primary? All the buckets started with the same strawberry juice, SG and yeast. Obviously they will be mixed in carboys for secondary. Any thoughts would be appreciated. Thanks in advance - this forum has been extremely helpful!

Think I would ferment them down and maybe taste each as they are going to secondary. If any taste off I would keep those apart, let them finish and taste test again on the off chance you might have something wrong with one of the buckets. Otherwise, ferment them and blend em. Arne.
