So I decided to rack from the 6 gal carboy to the 5 gal carboy. The SG has been at 1.000 for a couple weeks. I have been without heat for 6 weeks so I think the fermentation slowed down. 2 questions: now that the lees are separated out of the wine will it still ferment dry in the 5 gal carboy? I cleaned the carboy with a sanitizing dose of k-meta. I let the carboy drain but there was still traces of solution. Will this mess with the wine and is it safe?
