I was at an apple orchard today and picked up some apple cider. I am hoping to use it to start some apple wine tomorrow. The cider was flash pasteurized and has sodium benzonate in it. Is this going to prevent it from fermenting? If so, I'll have to try to find someone who sells cider without any preservatives in it.

benzoate is a preservative and stops the yeast working.

so yes you need to buy a product with no added preservatives.

I have heard of people boiling juices with preservatives in them for 15 minutes to 'drive off' the problematic chemicals. ( including sorbates)

Every time this has been mentioned in a recipe, there has been no problem with fermentation.

There is a thread Troy started about a cranberry juice that would not
start fermenting. Just because cranberries have benzoate in it.....

Boiling juice will drive off sulphite like Allie said however I am not sure that it will drive off benzoate. I can not find anything about that in literature.

Follow the thread Troy started as you have the same problem.

Well you could try adding yeast and see what happens but I dought it would work.

I found some preservative free cider! I guess I'll just have to drink the other stuff right away. :p

Thanks for the advice, I'm glad I didn't waste some perfectly good cider.
