I'm looking at making a few different recipes. Blueberry, cherry, pineapple, apple.
I want to use 4 different 1 gallon containers.
Will it work if I do 1 fermentation stage only, and then bottle immediately?
Or do I absolutely need secondary fermentor?

Thanks

It seems to me you have the secondary fermenters (the one gallon jugs). What you need is a primary fermenter. The jugs would be impractical as the amount of gas released in primary fermentation would just about blow the airlock out of the jug. You will need a wide mouthed container like a ceramic crock or a stainless steel soup pot for your primary. I would keep the wine in this container until the SG reached 1.010-1.020 and then transfer the wine to the 1 gallon jugs. Add air locks and let the wine finish fermentation. You would still need to rack at least once, de-gas, k-meta and stabilize and clear before bottling to be safe, IMHO.
