I'm in the process of a WE Aust.Cab.Shiraz, I have just completed step 4 (racking and clarification) which says to add an extra 1/4 tsp of potassium metabisulphite if you plan to age for more than six months, which i did.
Should i still add an extra 1/4 tsp of potassium metabisulphite when i filter the wine at the bottling stage ?
