Adjusting pH

Hi there !

As far as I know , the pH of the Must should be adjusted before pitching the Yeast .

I've read also that during fermentation , the pH of the Must raises .

I'd like to know , how often do you check and adjust the pH ?

Once every Day ?! Or after the fermentation is finished ?!

I adjust my acid level 24 hours prior to adding my yeast.

I check the ph levels after fermentation - i have yet to re-adjust my acid or ph levels after fermentation.

How could you be sure that the pH has not exceeded 3.5 during fermentation ?!

If you adjust the acidity level around 0.6 to 0.7% - the ph level should be between 3.3 and 3.7.

The lower the pH, the higher the acidity; the higher the pH, the lower the acidity.
