I used to brew, but ive switched to the wine industry.
I am used to brewery brite/fermentation tanks with spray balls at the top that I would just hook a pump up to and run a CIP/SIP loop.
Now I work with variable capacity wine tanks and I think they could use a good clean down.
1. What is the best way to clean a variable capacity tank?
2. Are there spray balls for the racking arm that are worth while?
3. Does anyone have a good, free handbook on winery specific sanitation (including chemical guidelines and whatnot)?
