I have 18 gallons of California juice ready to buble. I just checked the PH and TA. The PH will only finish at about 3.02 while the TA is falling at about .8. These numbers are questionible to me. Does anyone have experience with the white merlot? Do I follow PH/TA guides for reds, or white? Any help would be great. Thanks
