Hey I'm making my first amarone with a bag with dried grape skins. The manual is a bit confusing as it suggests I should stir at min every 2 days. However the final instruction for stage 1 is to leave it along with the lid closed. Anyways looking for your expert advice if I should give it a stir now that fermentation has started?
 
Thanks sour, that's exactly what I was looking for. I was really confused by the "do not stir"' and "do not disturb" comments in the manual.
 
My guess is the "leave it along [alone]" has to do with not stirring between pitching the yeast and fermentation starting.
