I'm making a batch of Riesling and it says in stabilising it syas to add Potassium Metabisulfite and then it says before bottling to add Potassium Metabisulfite again if you want to age the wine .

Due you want to add it again for aging ? When due you add this before bottling the same day or a few days before ?
 
When you stabilize this wine, sorbate is added as one of the packets. Because of this you add k-meta at the same time to prevent a posible spontaneous MLF. That would create a geranium smell that is undesireable so the meta is added as a precaution. Then after waiting a while before bottling, extra k-meta is added to increase the longevity of the wine. It also helps insure that no bad bacteria get to working on the wine. Follow the directions and you won't go wrong. You can add it a few days before or mix it in before bottling and bottle right away. Just be sure there are no lees to stir up. If there is, rack it to a clean bucket(primary), add the k-meta, stir well and bottle from there.
 
It mentions to add sorbate before bottling but not k- meta . Is k-meta for aging or just for clearing
 
potassium metabisulfite is the most important thing to add. If it is not added, you can get spoilage and bacteria in the wine. If you use sorbate without it, you are going to have bad results- it could ruin the wine. K-meta is for aging, not clearing.
