I have been growing my vine for roughly 2 months now and it has grown to be about 7 feet tall. What do I do with it now? Should I continue to let it grow vertically or encourage it to start growing out to the sides 90 degrees?

It might be worth mentioning that I am in north Texas and it is a Chambourcin vine.

Single vine? Well in any case it looks a little overwhelmed by it's surroundings.

You have at least a couple of choices.
Build an arbor (Arch, Flat lattice work, your choice),
Get another vine and start a wire trellis and train it. (That will mean 'tough love' pruning.) Here's a photo on the wire trellis method and a link to "How to Train Your Grape Vines" https://www.arborday.org/trees/fruit/train-grape.cfm
