I started four buckets of Chilean Juice on 5/6, transferred to carboys 5/13, I was thinking of racking again but not really sure why. Should I rack when SG stabilizes or just let them sit for a month on the Lees? What say ye? bk
 
I usually let them in the buckets until sg is between 1.010 and 1.000. Rack to carboy and let it alone until sg is below .998, rack again, sulfite and let it sit for a couple of months, depends on how much sediment is on the bottom.
 
Either ferment them dry and then rack or rack it around 1.010, do not let it sit in there for a month!!!!!! You really should rack if fermenting to dry as soon as its done fermenting.

Depends,,,... Whats the gravity NOW?
Once dry rack and stabilize and start to age for ONE YEAR before bottling.
