Quick and simple question for you all .I have a bunch of 7.9 gal. primarys , is it ok to do a 3 gallon kit in that size or is there to much extra space to use .

I recently did a 3 gallon Coffee Port in my 7.9 bucket. However, I did not ferment to dry in it. I transferred it to a 3 gallon carboy at around 1.002.
 
As a primary you can use it head space really doesn't matter much, as a secondary, too big need to go to the 3 gallon carboy.
 
Thx for the replys guys wasnt sure bout the head space . I new I needed 3 gal. carboy .
 
As long as you snap the lid shut around 1.030 or so there will be plenty of C02 to protect the wine even with that much headspace plus the wine at this time is just loaded with C02.
