Looking for a tried and true fig wine. Our neighbor has pails and pails of figs.
Can we just follow the basic wine making directions by freezing first and then proceed like regular fruit wine recipes?

Sugar; regular or brown? Looking for an ABV of 10.5 to 12%
Raisins?
Bananas?
 
sure you can sammy, regular sugar, and bananas..heads up on the lees.
it throws out more then apple,peach are mango...from a 6 gallon batch you may get 4.5 ...but you will be rewarded at the end..it is excellent.
your lucky to get them...
