I start in a pail ( primary) rack to a 6 carboy to clear and degas, I am not concerned about head space in the short run because there is still co2 escaping. Let the wine clear and degas for a while, then rack to a 5 gallon and put the leftover in a .75 ltr bottle or 1.75 ltr bottle with bungs and airlocks depending on how much is left. When I rack again I use the "leftover" to top off, drink the extra "young wine" and bulk age. It's a win win!!

Thank you for your feedback - I think I will order the headspace eliminator today (and eventually get the AIO). I do have a 5 gallon carboy reserved for a plum wine I am planning to start this weekend, but I think I will reduce the plum recipe to three gallons, order a three gallon carboy, and use the 5 gallon when it is time to bulk age the Blanc de Noir. I find that one never has too many carboys ;)[/QUOTE]

Wow. I just started this tonight. Guess I took my sweet old time...

I used W15 yeast and added half the f-pac into the primary.

Anyone have updates on this one? How is it?
