RJ Spagnols instructions tell one to just throw the yeast in on top at fermentation and do not stir. The yeast packet says to prep it first by adding it to top of water for 15 minutes without stirring, then stir, then add to must. Both start the same, but differ in the end. Whose instructions do I follow? Does it matter? Thanks.

I always follow the kit instructions concerning yeast. If it says sprinkle I do so. Mosti Kits say to follow yeast package instructions to rehydrate so I do that on those kits. Lots of folks just sprinkle regardless.

I like to give the yeast a head start. I either hydrate it or make a starter.

I always prepare a yeast starter, but in many cases, it is not really necessary.
I do it just to make sure the yeast is good.

I should also add that most of the time I do not use the yeast that is supplied with the kit. The ones I use tend to be much less "hearty" than the supplied yeasts. So, that is the other reason I always use a yeast starter.
