I have been using oak spirals for awhile now, and while they do help to give the wine structure and smooth out the rough edges, it does not have that awesome oak barrel taste. Is there any way to achieve this with carboys (e.g. oak cubes, oak stave segments, oak balls, etc), or are barrels the only way.

P.S. I use either medium or medium plus French Oak and leave spirals in my wines about 4-5 months before removing.

Agree with greg.

All oak additives simply add oak flavor. Barrels offer oak flavor plus concentrate the wine and also smooth it out through micr oxidation.

Try geeting a barrel and you will see your wine "kicked up to the next level".

As soon as this wedding is over and my wallet is no longer a black hole I will get into the barrel game. Until then I will just look out the window and think of the dream cellar/lab, lol!!!
