Just racked my mustang(similar to muscadine) grape over to the 5 gallon carboy. Of course I'm a little short, more than I wanted to be. What would you guys recommend topping it up with?? Its pretty darn tart as expected....I thought I had the acid in the right area though.

or I could use the 1 gallon of mustang/blueberry that I started 2 weeks prior to this one. But it is even more tart??
I'm not worried about keep a "true" mustang only.
