I have a 96 ounce can of Vintner's Harvest elderberry base and would like to use it to make a mead (melomel?). I would like the end product to be medium sweet. How much honey do you suggest I begin with in the primary? I am thinking of making a 3 gallon batch, or would you recommend making 1 gallon for a more intense flavor? Thank you for suggestions and recommendations.

I'd go with the 3 gallon batch.

1 quart of honey per gallon
3 quarts of honey is about ~ 9lbs

The residual sweetness can be conquered later on, just get it to ferment dry first.
Do you know what yeast and nutrients you'll be using?
