Are Your Grapes Ripe?

Fruit characteristics are very important, but those are a learned skill.

Ideally you want to pick grape when sugar, acidity and pH are in balance. One is the Brix:TA ratio. But an even easier and quick measurement to help determine such ripeness is brix times pH squared. Your grapes are probably ripe to harvest when that number is about 200 for whites and 260 for reds.

You can then use that number to back test and examine your grape characteristics to learn what to look for in the grapes themselves. That is, balanced tests, fruit considerations, current weather patterns, experience, etc. etc. etc. should be all taken into account.
