Well,


I racked 'em last night and tightened them up and added 1/4 tsp meta and tasted all. Seems to be very good. There are 4different batches of Syrah - 1 each of American Oak; French Oak and Hungarian Oak and 1 with zero oak. What a difference between the oaks. I think that French is my favorite (so far) but the zero oak is not bad either.


They all have been bulk aging since last Septemberwhen we picked them.


I think that I am ready to bottle.

that is a wonderful site...good luck on this...did you put any meta on them prior to this?
 
It is always so much fun sampling all the wines when you have a bunch of them. I need to break it into a few sessions - just too many to sample all at once. Have fun bottling.

Looking fantastic rrawhide! How long did it take for the oak level to get where you want it?

About 2 months for all the oaks - I used oak cubes for all the different flavors.
