once the wine is in the barrel, how often do you check the wine?

Depends on size of barrel. The smaller the barrel, the sooner you have to taste wine. I own a 5 gallon barrel and taste my wine on a weekly basis.

How long do you keep your wine in the 5 gal barrel?

Oak is very aggressive right now as my barrel is one year old so I tend to keep it filled with wine about 3 weeks.
