For all us newbies out there who want to drink a homeade concoction this century here is a recipe:


Clean and sanitized primary


Champagne yeast


3 Gallons store bought apple juice-no preservatives


3 tsp yeast nutrient


2 lbs sugar


Take the 2 lbs sugar and mix it with an equivalent amount of juice, put it on the stove and let is dissolve into solution. Set aside and let cool to room temp.


In your primary put 3 gallons apple juice with 3 tsp of yeast nutrient and mix together. Add the sugar solution and mix well. When the must is room temperature, sprinkle the champagne yeast over the top. Let sit for 4 to 5 days then rack to a secondary carboy. It will only fill the carboy about 1/2 waybut that is o.k. After 5 to 6 days rack to your primary. In a seperate clean pan mix 1/3 cup of sugar with an equivalent amount of water and disolve into solution. When it is room temperature pour it into your primary and mix well.


Then bottle in beer bottles and let sit in a warm place for about 5 to 7 days. Pop one open and if there is an acceptable amount of carbonation then put them in a cold place, ie. your regrigerator. This will stop the fermentation.


This is pretty darn good after a week in the bottle and will only get better with time.
