How many vines to purchase?

I'm a little south of you, central IN. For Marquette with that production goal, I recommend 30-50 vines. Too many variables to nail it down more than that. I have Marquette but have not made wine off it yet, but similar varieties I have 20 vines will give 5-7 gallons finished wine (Foch, Oberlin Noir).

For white, I suggest you consider Traminette and Cayuga White. My Cayuga will give nearly a gallon finished wine per vine in good production years and have good flexibility in style. They are a NY Finger Lakes variety so they should handle your climate. They have done well for me here, with the exception of 2014 when we hit -15F two consecutive weekends, and I had to cut them back to the ground.
