I tried wine making a couple of years ago. I made a grape and honey think its called a mellomel but when I tried it after 6 months and it was nasty it tasted likke rocket fuel I gave it to my brother in law he will drink any thing buy I kept one botttle I ran accross it today and popped it open and took a drink and it is awesome I wish is kept the rest now I want to make more but is it normal to change that much in a year?
 
Young wine can be just Ike unripened fruit, very tart and not very pleasant. Just like that fruit, the wine needs time to mature.
 
Honey wines usually go through a not so good period until they are well aged. FYI - the specific term for a grape/honey wine is pyment. A melomel is other fruits. Except apple, which is a cyser. Oh the mead brewers have made it so complicated! :)
