I've only been making wine for a few years but have had good luck so far. I'm lucky enough to live on a small farm with access to most fruits and have made several "country wines" that have turned out pretty well. Last fall, I decided to try a recipe for chocolate cherry mead that I saw on Jack Keller's site. It smelled and tasted great through all the initial rackings. Per the instructions, after the fourth racking, I bulk aged it for one year. When I opened the jug yesterday to do the final racking to stabiltize it before I bottle it, the smell was really off. I tasted just a bit and it tasted strange, almost rubbery. It's not a strong smell or taste, just not right. I've been reading posts on this site since I started making wine but can't find any that sound like this problem. Anyone have any ideas or suggestions. I hate to toss it after so long.
