For my next wine (Riesling/Traminer) I was going to use the ICV D-47 strain. I checked and the ideal temperature range is 59-68 degrees.
The room I store my carboys in averages around 70-72 (coldest room in the house), so I was curious to see if a small degree difference would harm. If so, would placing the carboy in a container filled with a bit of cool water help counteract?
