I am making a Kenridge founders series Amarone it was ready to bottle10 days ago. I reracked it at that time, tasted it and it seemed fine. Allthough today it taste a little on the vinigary side is there anything that I can do at this stage in the process....Regards Dave
 
Does it taste tart or truly like vinegar?
Sounds crazy, but put a drop of vinegar on your tongue to compare the taste.

It is too young to already be vinegar.

I'll bet it is just very tart. I think the word amarone translated means some like "a little bitter" in English.

A young wine is always going to be tart anyway,but an Amarone is always going to be "a little bitter".

If it truly is vinegar, which takes months and months to form, it will never change back.

The wine should be fine in 18 to 24 months.
 
Hi gearrjammerr. Welcome to the forum. You mentioned in your post that it was ready to bottle 10 days ago. PLEASE, don't be in a hurry to bottle this wine. Amarone takes quite a while to come around. You'll have a much better result if you let it bulk age for several months. Good Luck!
