Today, I finally got around to bottling my port. I was gone all of last week visiting colleges with my son (please send lots of money). After racking to the bucket for bottling, I back sweetened it with a simple syrup mixture. I thought that it tasted pretty good now, so I'm hoping it will really be good in a few months or so. Thanks again for everyone's help.

Update, today I opened my first bottle of my port. I am very pleased with how it turned out. Ithas a verygood tasteto me. On the advice of a friend, I took a bite of chocolate and then a drink of port and WOW, that really made it taste even better. I'm hoping that it will taste even better with some more age. Thanks everyone for all the good advice. John.

To get an idea of aging, taste the wine with some hard, salty cheese. I usually use parmigiano reggiano.

That's a good idea Waldo. I am somewhat computer "challenged". When my son gets home from school today, I need to get him to show me how to do that. Another New Year's resolution along with learning how to make my own labels.

It sounds really good. Skinnydipper is right about Port and cheese. I have not tried the chocolate and Port yet. But, my favorite is still Port with Port!!! haha
